Pasta Primavera

Wow!

3/4 16 oz package spaghetti or linguine
1/2 small bunch broccoli, cut into 1 inch pieces (2 cups)
2 tbs. olive oil
1 12 oz. package mushrooms, cut in half
1 small onion, minced
1 small carrot, cut into matchstick-thin strips
1 12 oz. can evaporated skim milk
2 tsp. chicken-flavor instant bouillon
1 1/2 tsp. cornstarch
1/2 tsp. salt
1 medium sized tomato, seeded and diced
2 tbsp. grated parmesan cheese
2 tsp. minced parsley

1. Make spaghetti. Drain and keep warm in saucepan.
2. Boil broccoli. Low heat. Simmer 2-3 minutes. Drain.
3. In olive oil, cook mushrooms, onion, and carrot. Add red pepper.
4. Mix skim milk, chicken bouillon, cornstarch, and salt.
5. Pour milk, etc. into vegetables. Boil 1 minute. Add diced tomato, parmesan cheese, parsley, broccoli, and spaghetti. Toss to coat. Heat through. Makes 6 servings.
