Alfredo Sauce for Chicken Alfredo, etc.

Cheese Sauce

Ingredients:
6 tbs. butter
4 tbs. whole wheat flour
2 1/2 c. milk
1 tsp. salt
2 1/2 c. Parmesan cheese

1. Melt butter in saucepan.
2. Stir in flour.
3. Add milk and bring to a boil, stirring until smooth and thick.
4. Add cheese.

Chicken and Veggie Lasagna

Makes 6 main-dish servings

Ingredients
4 tbsp. butter
1 pkg. (10 oz.) sliced mushrooms
1 sm. onion, finely chopped
1 clove garlic, crushed with press
1/3 c. flour
2 c. milk, warmed
1 can (14 to 14.5 oz.) chicken broth (1 3/4 c.)
8 no-boil lasagna noodles
1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry
2 c. (1/2 in. pieces) chicken (10 oz.)
3/4 c. freshly grated Parmesan cheese
1 c. shredded part-skim mozzarella cheese (4 oz.)
Suggested extra ingredients:
Sweet red peppers
Chopped tomatoes
Extra cheese and/or canned grated Parmesan cheese for sprinkling
Salt and fresh ground pepper

Prep:
1. Cook noodles and spinach.
2. In 12-inch nonstick skillet, melt 1 tbs. butter on medium. Add mushrooms, onion, sweet peppers, and garlic. Add tomatoes if/when desired. Cook about 8 mins. or until mushrooms are lightly browned, stirring occasionally. Set aside.
3. Meanwhile, in 4-quart saucepan, melt remaining butter on medium. Whisk in flour and cook 1 minute. Gradually whisk in milk and broth until well blended; cook until sauce thickens and boils, stirring frequently. Boil 2 mins. Set sauce aside.
4. Preheat oven to 375F. Spray 8" by 8" glass or ceramic baking dish with nonstick cooking spray. Pour 1/2 c. sauce in bottom of baking dish; arrange 2 noodles over sauce, overlapping to fit. Top evenly with half of spinach, half of chicken, then 1/2 cup sauce; sprinkle with 1/4 c. Parmesan. Top with 2 noodles, mushroom mixture, 3/4 c. mozzarella, then 1/2 c. sauce. Top with 2 noodles, remaining spinach and chicken, then 3/4 c. sauce and 1/4 c. Parmesan. Arrange remaining noodles on top; spoon remaining sauce over noodles to cover. Sprinkle with remaining mozzarella and Parmesan.
5. Spray sheet of foil with nonstick cooking spray if necessary and cover baking dish. Bake lasagna 30 mins. Remove foil and bake 15 mins longer or until hot and bubbly in the center and lightly browned on top. Let stand 15 mins. for easier serving.

Each serving: about 445 cals, 33g protein, 36g carbs, 18g fat (7g saturated), 3g fiber, 57mg cholesterol, 740mg sodium.

Mango Chicken Curry

Mango Chicken Curry

There's something about the combination of mango and chicken that just works. We eat mango chutney with roast chicken so often that I even started making my own chutney just so we wouldn't run out. Here is a mango chicken curry I whipped up the other day. I love it, but my father thinks it's a little on the sweet side, so feel free to reduce the amount of mango the recipe calls for if you want a little less sweet. Or add a little more vinegar. The amounts are approximate, feel free to experiment. Just don't let the mixture boil after adding the cream or it may end up a curdled mess.

Mango Chicken Curry Recipe

Ingredients

  • 3 Tbsp (or more) of vegetable oil
  • 1 large onion, chopped (1 1/2 to 2 cups)
  • 1/2 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 Tbsp fresh minced ginger
  • 2 Tbsp yellow curry powder
  • 1/2 teaspoon ground cumin
  • 2 mangos, peeled and diced
  • 2 Tbsp cider vinegar or white vinegar
  • 1 1/4 cup water
  • 1 1/4 pounds skinless boneless chicken thighs or breasts, cut into 1-inch pieces
  • 1/3 cup golden raisins
  • 1/2 cup heavy cream
  • Salt and pepper
  • Cilantro for garnish

Method

1 Heat 2 Tbsp oil in a large sauté pan over medium heat. Add onions and cook, stirring occasionally, until soft, about 5 minutes. Add the red bell pepper and another tablespoon of oil, cook for a couple more minutes. Add the curry powder and cumin, cook for a few more minutes. The spices will absorb some of the oil, so if anything begins to stick too much to the bottom of the pan, add a little more oil to the pan. Add the ginger and garlic, cook for one minute more.

2 Add the vinegar, water, and a 1/2 of the chopped mango to the pan. Increase the heat and bring to a boil, then lower the heat to maintain a low simmer for about 15 minutes, stirring occasionally. Remove pan from heat. Scoop the sauce into a blender. Purée the sauce, pulsing until smooth. Return the sauce to the pan.

3 Add chicken pieces and raisins to the pan. Return to a low simmer. Cover the pan and let cook for 8-10 minutes. Chicken should be just cooked through. Use a knife to cut open the largest piece to check.

4 Add remaining mango pieces to the pan. Stir in the cream. Let cook at a very low temperature for another minute or two, uncovered. Do not let boil! Or the cream may curdle. Adjust seasonings. If a little too sweet, add a little more vinegar. If not sweet enough, you can add a dash of sugar. Add salt and pepper to taste.

Serve over rice. Garnish with cilantro. Serves 4.

No Bake Cookies

1 stick of butter
2 c. sugar
1/2 c. milk
1/2 c. cocoa
1/2 c. peanut butter
3 c. oatmeal

1. Boil butter, sugar, and milk for 4 mins.
2. Take mixture off heat.
3. Immediately add cocoa and peanut butter. Add oatmeal.
4. Stir quickly. Drop clumps onto wax paper and let harden.

Household Tips

Peel a banana from the bottom and you won't have to pick the little "stringy things" off of it. That's how the primates do it. Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.

Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold!

Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.

Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking.

To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up.
For a cool brownie treat, make brownies as directed. Melt Andes mints in double broiler and pour over warm brownies. Let set for a wonderful minty frosting.

Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic.

Leftover snickers bars from Halloween make a delicious dessert. Simple chop them up with the food chopper. Peel, core and slice a few apples. Place them in a baking dish and sprinkle the chopped candy bars over the apples. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream.

1. Reheat Pizza
Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works.

2. Easy Deviled Eggs
Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.

3. Expanding Frosting
When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving.

4. Reheating Refrigerated Bread
To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.

5. Newspaper Weeds Away!
Start putting in your plants, work the nutrients in your soil. Wet newspapers put layers around the plants overlapping as you go cover with mulch and forget about weeds. Weeds will get through some gardening plastic they will not get through wet newspapers.

6. Broken Glass
Use a wet cotton ball or Q-tip to pick up the small shards of glass you can't see easily.

7. No More Mosquitoes
Place a dryer sheet in your pocket. It will keep the mosquitoes away.

8. Squirrel Away!
To keep squirrels from eating your plants sprinkle your plants with cayenne pepper. The cayenne pepper doesn't hurt the plant and the squirrels won't come near it.

9. Flexible Vacuum
To get something out of a heat register or under the fridge add an empty paper towel roll or empty gift wrap roll to your vacuum. It can be bent or flattened to get in narrow openings.

10. Reducing Static Cling
Pin a small safety pin to the seam of your slip and you will not have a clingy skirt or dress. Same thing works with slacks that cling when wearing panty hose. Place pin in seam of slacks and -- ta da! -- static is gone.

11. Measuring Cups
Before you pour sticky substances into a measuring cup, fill with hot water. Dump out the hot water, but don't dry cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out.

12. Foggy Windshield?
Hate foggy windshields? Buy a chalkboard eraser and keep it in the glove box of your car. When the windows fog, rub with the eraser! Works better than a cloth!

13. Reopening Envelope
If you seal an envelope and then realize you forgot to include something inside , just place your sealed envelope in the freezer for an hour or two. Viola! It unseals easily.

14. Conditioner
Use your hair conditioner to shave your legs. It's a lot cheaper than shaving cream and leaves your legs really smooth. It's also a great way to use up the conditioner you bought but didn't like when you tried it in your hair...

15. Goodbye Fruit Flies
To get rid of pesky fruit flies, take a small glass fill it 1/2" with Apple Cider Vinegar and 2 drops of dish washing liquid, mix well. You will find those flies drawn to the cup and gone forever!

16. Get Rid of Ants
Put small piles of cornmeal where you see ants. They eat it, take it "home," can't digest it so it kills them. It may take a week or so, especially if it rains, but it works & you don't have the worry about pets or small children being harmed!

17. INFO ABOUT CLOTHES DRYERS
The heating unit went out on my dryer! The gentleman that fixes things around the house for us told us that he wanted to show us something and he went over to the dryer and pulled out the lint filter. It was clean. (I always clean the lint from the filter after every load clothes.) He told us that he wanted to show us something; he took the filter overto the sink, ran hot water over it. The lint filter is made of a mesh material - I'm sure you know what your dryer's lint filter looks like. well,...the hot water just sat on top of the mesh! It didn't go through it at all! He told us that dryer sheets cause a film over that mesh & that's what burns out the heating unit. You can't SEE the film, but it's there. It's what is in the dryer sheets to make your clothes soft and static free -- that nice fragrance too, you know how they can feel waxy when you take them out of the box, well this stuff builds up on your clothes and on your lint screen. This is also what causes dryer units to catch fire & potentially burn your house down with it! He said the best way to keep your dryer working for a very long time (& to keep your electric bill lower) is to take that filter out & wash it with hot soapy water & an old toothbrush (or other brush) at least every six months. He said that makes the life of the dryer at least twice as long!

Pasta Primavera

Wow!

3/4 16 oz package spaghetti or linguine
1/2 small bunch broccoli, cut into 1 inch pieces (2 cups)
2 tbs. olive oil
1 12 oz. package mushrooms, cut in half
1 small onion, minced
1 small carrot, cut into matchstick-thin strips
1 12 oz. can evaporated skim milk
2 tsp. chicken-flavor instant bouillon
1 1/2 tsp. cornstarch
1/2 tsp. salt
1 medium sized tomato, seeded and diced
2 tbsp. grated parmesan cheese
2 tsp. minced parsley

1. Make spaghetti. Drain and keep warm in saucepan.
2. Boil broccoli. Low heat. Simmer 2-3 minutes. Drain.
3. In olive oil, cook mushrooms, onion, and carrot. Add red pepper.
4. Mix skim milk, chicken bouillon, cornstarch, and salt.
5. Pour milk, etc. into vegetables. Boil 1 minute. Add diced tomato, parmesan cheese, parsley, broccoli, and spaghetti. Toss to coat. Heat through. Makes 6 servings.

Veggies, Chickpeas, Cheese, and Tortilla Chips

This is my favorite recipe I've created. I'm not sure what to call it.

Sautee onions in a big pan with olive oil. Add peppers (fresh or frozen) and sliced fresh mushrooms. Add chickpeas (or other beans or meat) and tomatoes (fresh--add seasonings as desired or canned--plain and add seasonings or get already seasoned, like tomatoes with mild zesty green chilies or tomatoes with italian seasonings). When it's all hot, put some in a bowl. Add cheese. Dip with tortilla chips.

Warm Cherry Pineapple with Cake

Pour a can of crushed pineapple in to a greased baking dish.Pour a can of cherries over the pineapple. Don't remove any of the juice. Then pour a yellow cake mix over that distributing it evenly--just the dry mix right out of the box. Melt a stick of butter or margarine and pour it evenly over the top. You can top it with nuts if you like them. Bake it for about 35 minutes in a 350 degree oven.

Easy Cake Mix Cookies

It seems there is always some brand of cake mix on sale! This is an economical way to use cake mix - it doesn't matter if you use the brand name, or the generic store brand - these cookies turn out great! Experiment with different flavored mixes and add-ins for different kinds of cookies.

1 packaged cake mix, any flavor
2 large eggs
1/2 cup oil
1 cup chocolate chips, M&M's or nuts

Combine all ingredients and mix together. Drop by tablespoons on a cookie sheet prepared with non-stick spray. Bake at 350º for about 12 minutes.

Eggplant Steaks

My mom saw a yummy recipe on tv and wrote it down for me.

take one eggplant, take part of the peeling off,
slice it
1 inch thick steaks long ways
should make about 4 each egg plant

3 plates
first one put flour , salt, pepper
second one eggs mixed up
third one fine bread crumbs and garlic, parley, cheese
flour then roll in eggs then bread mix
place 2 steaks at a time in hot oil fry till browned each side
place on a plate..

separate pan. one can crushed , diced tomatoes
heat with salt, pepper, tad of sugar teaspoon if acid bothers you..
i would do it haaa

when hot turn off add chopped basil

put 2 steaks on a plate and add the tomtato over the top with feta or other cheese

Eggplant Parmesan

INGREDIENTS:

* 1 large eggplant
* 2 eggs, beaten
* 1 1/4 cups fine dry seasoned bread crumbs
* vegetable oil, about 1/2 cup
* 1 package (8 ounces) sliced mozzarella cheese
* tomato sauce with herbs, below
* 2 to 3 tablespoons grated Parmesan cheese

PREPARATION:
Directions for eggplant Parmesan
Peel eggplant; cut into 1/4-inch thick slices. Dip eggplant slices into beaten egg; coat with bread crumbs. Heat oil in a large skillet. Fry eggplant in hot oil for about 3 minutes on each side, or until browned.
Transfer eggplant to paper towels to drain well.

Place half of the fried eggplant in a lightly greased shallow baking pan. Top with half of the mozzarella cheese slices and half of the tomato sauce. repeat layers; sprinkle with Parmesan cheese. Bake at 400° for 20 minutes, or until sauce is bubbly and cheese is melted. Eggplant Parmesan serves 8 to 10.

Tomato Sauce with Herbs

* 1 tablespoon minced onion
* 1 tablespoon vegetable oil
* 3 cans (8 ounces each) tomato sauce
* 1 1/4 teaspoons leaf oregano, crumbled
* 1/4 teaspoon dried basil
* pinch salt

Sauté onion in oil over medium low heat until tender. Add remaining ingredients; simmer for 15 to 20 minutes. Makes 3 cups of tomato sauce with Italian herbs for Eggplant Parmesan.

Mushroom Chicken Parmesan

"A baked chicken breast dish for company. The mushrooms lend a new flavor to a classic dish."

INGREDIENTS

  • 6 skinless, boneless chicken breast halves
  • 6 tablespoons butter, melted
  • 1 cup all-purpose flour for coating
  • 1 cup heavy whipping cream
  • 1/2 pound fresh mushrooms, sliced
  • 1/2 cup grated Parmesan cheese for topping

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Rinse and dry the chicken breast halves. Dip each in melted butter, then coat/dredge in flour.
  3. Place coated chicken in a 9x13 inch baking dish. Add cream to just cover. Top with sliced mushrooms and grated Parmesan cheese and bake in the preheated oven for 30 to 45 minutes. Let cool 10 minutes and serve.

Made a few changes with this recipe. I used half and half istead of heavy whipping cream. I also seasoned the flour with Lawrys seasoning salt, garlic powder and pepper. Seasoned the butter too with garlic salt and pepper. I added the half and half the last 20 minutes of cooking so it would not currdle as it had with another review. I also sauted the mushrooms along with a yellow onion and a green bell pepper in butter then added them the last 15 minutes. This is a great recipe. I will be making again and again!! Thanks for sharing:)

Very easy, simple, but taste is great! As there is no seasoning on this recipe, I added S&P, garlic powder and onion powder before coating in flour.

My husband and I loved this recipe. I took the advice of others. I added salt, pepper, garlic powder and herbs de provence to the flour. I sauteed the mushrooms with some fresh spinach, fresh garlic, and sherry. I served over angel hair pasta. Delicious!

Essence (Emeril's Creole Seasoning)

2 ½ tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup
